Ingredients

  1. 2bananas
  2. 1 tspbicarbonate of soda
  3. 1 tspbaking power
  4. 250 gflour
  5. 60 gbutter
  6. 125 gsugar
  7. 1egg
  8. 2tblsp vanilla essence

    Mash the bananas and add the bicarb of soda to activate the bananas.

    Put the sugar and butter into a mixing bowl and cream it well. Add the egg, vanilla essence and baking powder.

    Add the flour and fold in the bananas. Fold mixture and place it into a greased dish or a loaf pan covered with baking paper (optional).

    Bake at 180*C for about 1 hour or until knife comes out dry.
