In Mexico City, after a night out, people look for tacos al pastor, but in Oaxaca, they go for tlayudas. These are super easy to make for a get-together with friends.

Tlayudas are a type of giant crispy tortilla. Warm each one over low heat on both sides to soften them and make them easier to work with. Spread one side of each tlayuda with pork lard (asiento), which is the flavorful fat left at the bottom of the pot after making carnitas or frying pork rinds.

Once the lard is spread, cover the surface with a layer of refried beans, then add a layer of shredded lettuce, shredded Oaxaca cheese, sliced tomato, and sliced avocado.

Grill the tasajo (or your preferred meat) in a skillet until cooked through.

Place the tlayuda back over the heat to melt the cheese, flipping it frequently to prevent burning.

You can fold your tlayuda in half or serve it open-faced.
