Ingredients

20 minutes
  1. 2 tablespoonsfinely crushed red bird’s eye chilies
  2. 2 tablespoonsfinely minced garlic
  3. 4 tablespoonsdistilled white vinegar
  4. 1 teaspoonsalt
  5. 5 tablespoonsgranulated sugar
  6. 3 tablespoonswater
  7. Adjust the ingredients as you like: For milder heat, use large red chilies; for medium heat, mix large red chilies with bird’s eye chilies; for extra spicy, use only bird’s eye chilies

    Pour the vinegar into a saucepan and heat over low heat until the strong vinegar smell fades. Add water, sugar, and salt. Simmer until the mixture thickens slightly.

    Add the minced garlic. When it comes to a boil and smells fragrant, add the chilies. Once it boils again, turn off the heat. Taste and adjust as desired for a balance of spicy, sweet, sour, and salty flavors.

    Pour into a glass jar and seal tightly. Store in the refrigerator for several days. Sterilize the jar by boiling or steaming before use. Always use a clean spoon to scoop out the sauce to keep it fresh longer.
