Keto Chicken Malai kebab

What is Keto?
Basically put the Ketogenic diet is extraordinarily a high-fat and a very low-carb diet. The carbs have to be limited to only 20-50 per day. The keto diet lowers blood sugar and insulin levels and swings the body’s metabolism away from the carbs to the fat and ketones.
What is Malai Kebab?
Simply put, Malai Kebab is tender chunks of chicken smothered in creamy textures of dahi or yoghurt, cheese, cream along with spices and a liberal squeeze of tangy lime. Malai kabab is very popular in India and is a legacy of the Mughal Era. It is conventionally small cuts of boneless marinated chicken stringed on skewers and roasted on the charcoal heat. Now that there are no tandoors, it is grilled in ovens or pan fried. It is traditionally eaten with green coriander and mint chutney served with onion rings and lemon wedges.
Compared to most Indian recipes, it is less spicy. Kids will love the mild flavours and I am waiting to cook it for my grandson when he is here.
This recipe is very easy to make and you can marinate the chicken and put it in the fridge in advance. It is a delicious creamy and cheesy kebab
When it comes to any kebabs I prefer the leg and thigh meat. Chicken breast tends to dry out while this is succulent and delicious.
While I cooked these in the oven, you can grill them in the pan if you do not have an oven.

Ingredients

4 servings
  1. 500 gmsBoneless Chicken
  2. 100 mlHeavy Cream
  3. 50 gmsCheese-Britannia or Amul
  4. 10 gmsGinger-Garlic Paste
  5. 2 tbspGhee or clarified butter
  6. 1/2 tspSalt
  7. 1/2 tspBlack Pepper Powder
  8. Juice of half a lime
  9. 1/2Green Pepper
  10. 1/2Yellow Pepper
  11. 1/2Red Pepper
  12. as neededOnion

Steps

    Cut the chicken into kebab size pieces.
    In a bowl mix the cheese, cream, ginger,-garlic paste, salt, pepper, and lime juice. Add the ghee too. Mix all the ingredients well till you have a nice creamy marinade.

    Add in the chicken and mix nicely with fingers to coat all the pieces. Cover and set aside for one hour if you are going to grill it soon or else store it in the fridge overnight

    Before grilling brush the ghee on the chicken pieces. I used wooden skewers which I had soaked for 15 minutes. You can skewer and directly roast but I lined a baking tray with foil and grilled the chicken on it.

    I like colour in my food and I chopped square pieces of the coloured peppers and onion and skewered them with the half cooked chicken. I then roasted them on a grill in the oven to get the charred colour.

    Serve with chutney and lime. Bon appetite!!
