Have fresh gizzards with you. i used half the package

Wash the gizzards thoroughly under running water, boil in salted water for 15 to 20 min under medium heat. drain and let cool then chop into smaller pieces

Prepare the breading (flour with spices of your choice), eggs and the wheetabix
- 4
Dust the chopped gizzard with flour mixture, shake off the excess flour, then dip them into the beaten eggs and finally into the crushed wheetabix

Heat oil in a large skillet over medium high heat and fry the gizzard pieces in the oil for about 3 mins or until golden. Remove and let drain on a paper towel

Serve hot. I had mine with spaghetti and guacamole salad
