Chinese Style Tomato Red Pepper Chicken

Make a paste of two dry red chillies, 2 cloves garlic, 1 inch ginger, 1 green chilli and 2 tbsp vinegar. Add the paste to the chicken alongwith 1 tbsp salt, half tbsp sugar, 3 tbsp cornflour, half tsp kashmiri red chilli powder, beaten egg and 1 tbsp vinegar. Marinate the chicken for atleast one hour.

After one hour, in a heavy bottomed vessel pour in vegetable oil and allow it to heat up. In the meantime immerse two dry red chillies in vinegar. When the oil is hot fry the chicken pieces till it has become light golden brown. Keep the fried chicken aside and start preparing for the gravy.

In the same oil put in 1 teaspoon ginger garlic paste, fry it for two seconds and then add the tomato paste and the dry red chillies which were immersed in vinegar. Stir it till the raw smell goes away and then add the fried chicken pieces.

Stir the fried chicken pieces nicely and then add tomato sauce, red chilli sauce and diced capsicums.

Saute the chicken along with the sauces and then add 1 tsp salt, 1 tbsp sugar and 3 tbsp vinegar. Stir in. Add half cup hot water and cover the chicken and allow it to cook for two minutes.

When the gravy has become little thick, add in the diced onions and slit green chillies. Give it a good stir and cover it for one minute to make the onions a bit soft but retain it's crunchiness. After one minute transfer it into a bowl and serve with steamed rice or fried rice or paratha.
