Ingredients

  1. 2eggs
  2. 2/3 cupwhite sugar
  3. 4 tbspineapple juice
  4. 2/3 cupall purpose flour
  5. 1/4 tspsalt
  6. 1 tspbaking powder
  7. 1/4 cupbutter (1/2 stick or 4 tbsp)
  8. maraschino cherries
  9. 2/3 cupbrown sugar
  10. 1 canpineapple rings or crushed pineapples
  11. muffin pan

Cooking Instructions

    Pre heat oven 350 degrees. Make sure to spray muffin pan with non stick cooking spray.

    In a mixing bowl,add eggs,white sugar and pineapple juice. Beat for 2 minutes. In a separate bowl stift together flower,baking powder and salt. Add to wet ingredients and mix for 2 minutes.

    Small pan add butter and melt and then add brown sugar. Stir on low heat for a minute.

    Place the brown sugar mixture on bottom of each muffin pan,then place the pineapples on top,add the cherrie in the middle.

    Pour your cake mixture over to fill 3/4 of the way. We used crushed pineapples. If you have a small pan you will have to cut the pineapple rings to fit.

    If you don't use all the brown sugar mixture you can add after they are done if you like them extra sweet.
