Ingredients

  1. For Khichdi
  2. 1 CupMoong Dal (Yellow Split Gram)
  3. 1 CupDaliya (Broken Wheat)
  4. 1 CupCottage Cheese (Cut in cubes)
  5. 1 CupRoughly Torn Spinach leaves
  6. 1Medium Sized Tomato (chopped)
  7. 1Medium Sized Onion(chopped)
  8. 1Medium Sized Carrot (chopped)
  9. 1/2 CupChopped Bottle Guard
  10. 3 TspGreen Peas
  11. 3 TspSweet Corn
  12. 3-4Cloves
  13. 3-4Pepper corns
  14. 2Chopped Green Chillies
  15. 2 TspGarlic Paste
  16. 1/2 TspGinger Paste
  17. 1 TspLemon Juice
  18. 1/4 TspRed Chillie Powder
  19. 1/4 TspTurmeric Powder
  20. 1 PinchGaram Masala
  21. To TasteSalt
  22. 1 pinchHing(Aesfoetida)
  23. 1/2 TspCumin seeds
  24. 1Small Cinnamon Stick
  25. as requiredOil For Cooking
  26. 4 CupsWater
  27. For Raita
  28. 1Medium Sized Cucumber Finely Chopped
  29. 2 CupsCurd
  30. 2 TspSugar
  31. 1/2 TspEverest Chaat Masala
  32. 1 TspFinely Chopped Mint leaves
  33. 1 TspFinely Chopped Coriander Leaves

Steps

30 minutes
  1. 1

    Soak Moong Daal in water for half an hour. Add 2 Tsp cooking oil to the pressure cooker let it heat. Add Cumin seeds and let them crackle. Add Hing, Cinnamon, Clove and Peppercorns.

    Add green chillies, ginger and garlic. Saute for a while. Add onions and saute till golden brown.

  3. 3

    Add red chilli powder, turmeric powder. Sauté untill it's properly cooked. Amount of red chilli can be adjusted according to the taste. For kids red chilli powder can be skipped.

    Now add all the vegies like carrot, bottle guard, green peas, tomatoes and spinach. Cook for 2 min.

    Add cottage cheese cubes and sauté well so that all the masala is properly mixed with it. Take care that cottage cheese doesnt get mashed or broken.

    Add water and mix well. Add soaked moong daal(strain water) and daliya. Add Salt to taste. Add chopped coriander. Mix all the ingredients and pressure cook for 2 to 3 whistles.

    Let the cooker cool down to release pressure and Shahi Paneer Khichdi is ready to serve.

  8. 8

    For Raita, take a large bowl and mix curd, sugar, chopped cucumber, mint, coriander and mix well. Add Chaat Masala and blend well. You can use a fork or hand blender to mix the raita. Keep it in fridge for 15 minutes and serve chilled with steaming hot Khichdi.

  9. 9

    Serve with roasted Papad for crunchiness.
