Chicken and Corn Soup

I love soups; they are simple meals full of nourishment, quick to make, and make you feel great. They're perfect for those winter days when you come home freezing from work, get comfortable, take off your makeup, and get ready to watch your favorite TV show or series. A good bowl of this soup, on the couch, with a slice of buttered toast... mmmm, what a moment.
Obviously, only suitable for very homey people like me.
Chicken and Corn Soup

Cooking Instructions

In a pressure cooker, place the chopped vegetables and chicken. Cover with 4 cups of water (about 1 liter). When the second orange ring appears, cook for 8 minutes. Let it cool.

Once the pot is cool, remove the chicken and shred it. Then, transfer all the vegetables to a blender and puree them. Add to the broth along with the shredded chicken and corn.

Add a splash of oil, season with salt and pepper (I didn't add pepper to keep the soup's golden color, no black specks).

Let it simmer for 10 minutes. • Before serving, you can add a few drops of lemon or sprinkle with chopped fresh parsley or cilantro. I didn't have any.

This is one of my absolute favorite ways to cook fresh sweet corn! It's so simple and really takes advantage of the corn's natural sweetness. Last summer I think almost of all of the corn I bought ended up being turned into this soup!
