Yam Donuts

The democracy day has been the free day i have this week. So, i was at home without attending school.
I am eager to enter the kitchen and cook iftar for the family . Because my family have been missing my iftar dishes this year as i came back late from school everyday. So, i decided to delight them with a delicious snack. #ramadhancontest
I knew that yam ball is a favorite snack to the family, then i decided to prepare it but in a different way. I try making this snack for the first time and i named it "yam donuts". The outcome was fine and fun.

I knew that yam ball is a favorite snack to the family, then i decided to prepare it but in a different way. I try making this snack for the first time and i named it "yam donuts". The outcome was fine and fun.
Cooking Instructions

In a pot, combine yam with salt and sugar, add water, boil till very soft, this would take 12-15 minutes, depending of the level of temperature and pressure used.

Grind onion and scotch bonnet in a mortar till quiet smooth.......................................Note: Do not skip this step, it's the tip behind getting a sticky and soft ground yam easily; which will provide simplicity when making the donut shape.

Add boiled yam to the ground onion and scotch bonnet

Start beating it, add 3 seasoning cubes and curry powder by the way

Continue beating for 5 minutes. Yam should be very soft and sticky by this time.

Take some ground yam

Using two hands, mould it into fine ball

Toss the yam using two hands, adjusting the edges.

Form a pattie like this

Take a clean bottle cover or small cutter

Drop the cover on the top center of the pattie. Push it inside

Remove the center as shown

Combine flour with chilli powder, the remaining curry powder and 1 seasoning cube

Dip yam in the spiced flour

Whisk egg. Dip coated yam in the egg

Crush cornflakes. Coat the yam with cornflakes or breadcrumbs

Follow the same procedure till the yam is used up. Yam is now ready for frying.

Fry both sides on medium heat. Transfer to a colander to remove excess oil.

Serve with ketchup or any desired dipping sauce
