Prepare the ingredients. Trim the ends off the enoki mushrooms and rinse them well. Set aside.

Slice the pork loin into thin strips. Marinate with the marinade ingredients for 30 minutes. Peel and julienne the ginger. Set aside.

Heat a pan and sauté the ginger until fragrant. Add the pork strips and stir-fry until they are halfway cooked.

Add the enoki mushrooms and stir-fry briefly. Cover the pan and let it cook for 10 minutes.

Transfer to a plate and serve.

* The marinade provides enough flavor—no need for extra seasoning.
* For a stronger taste, add 1 tablespoon of Chinese BBQ sauce (shacha sauce) or spicy bean paste (doubanjiang).
