Ingredients

40 mins
  • 4 Cshredded chicken (you can use a rotisserie chicken from the store)
  • 2 cans (10 3/4 oz)cream of chicken soup
  • 1 Csour cream
  • 10 ozcan Rotel (I like 'Original')
  • 15 ozcan black beans, rinsed and drained
  • Sprinkling of taco seasoning mix (I use very little, but use to taste)
  • 5 Ccoarsely chopped crushed tortilla chips
  • 2 Cshredded cheddar cheese
  • Chopped tomatoes

Steps

40 mins

    Heat oven to 350 degrees

  2. 2

    Spray 9x13" casserole dish

  3. 3

    Stir: chicken, soup, sour cream, Rotel, black beans, seasoning in a bowl

    Layer: half the chicken mixture, 3C tortilla chips and half the cheese

  5. 5

    Cover. Bake for 30 minutes

  6. 6

    Uncover. Sprinkle remaining cheese

  7. 7

    Bake uncovered for 10 minutes or until bubbling

  8. 8

    Sprinkle with chopped tomatoes. You could also add chopped black olives (I just didn't have any on hand)
