Use first 5 ingredients to make marinade. Put cleaned fish in the marinade. It doesn't have to sit in the marinade long, just to coat the fish in oil & spices

Remove the sardines from the marinade. I use broiler, but you can also grill over direct heat. Place oven rack about 4-6" below broiler. Place fish, skin side down, in a pan that's rated for a broiler, with sides high enough to catch all the juices. Turn on broiler and put pan directly under the flame.

Broil about 5 minutes (if you preheated, 2-3 minutes). Using a metal spatula or fish turner, flip the sardines over and grill on second side, about 2 minutes longer. Skin should show a little char and be crispy. Transfer the sardines to a large platter and season with salt. Garnish with chopped parsley and serve with lemon wedges.

Mix aioli ingredients together and taste. Add additional ingredients to taste (more lemon, hot sauce, vinegar or pickles, etc.)
