Ingredients

  • 2 cupscornflour
  • 1 cupgram flour or dhokra flour
  • 2 cupswheat flour
  • 1 teaspoonchilli powder
  • 1 teaspoonturmeric powder
  • 1 teaspoonchilli paste
  • 1 tablespoonginger garlic paste
  • to tasteSalt
  • 1 tablespoonsesame seeds
  • 1 teaspooncarom seeds
  • 1 tablespooneno
  • 1 cupyogurt or sour cream Oil for frying

Steps

    In a big bowl add the corn flour, gram flour, wheat flour, turmeric powder, salt, sugar, chilli paste, ginger and garlic paste chilli powder, sesame seeds and carom seeds.

    Mix all together and add yogurt and mix well. Add warm water and make a soft dough. Leave it overnight to ferment.
    If your yogurt is not sour add citric acid if preferred.

    The following day heat oil for deep frying.
    Add eno to the dough and mix well. If it is dry add a little water and if it has become soft add a spoon of wheat flour.

  4. 4

    Make lemon size ball of the dough. Take the dough and deep in sesame seeds and keep it between two plastic sheets and pat it flat.
    Deep fry the vadas flipping them couple of time until golden brown.

    Please note this recipe has no soda bicarbonate or oil in the dough.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
