Cut all the vegetables as you like. Sauté the meat with the onion, then add spices and salt and continue sautéing. Add tomato paste, vegetables, chickpeas, celery, and continue cooking with water.

When almost cooked, add the zucchini.

Moisten the couscous and let it dry. For 2.2 lbs couscous (1 kg), use about 8 1/2 cups water (2 liters). Use 4 1/4 cups water (1 liter) to moisten the couscous the first time. Once it dries, rub it between your hands with a little oil, then steam it for the first time. Place it in a large bowl, sprinkle with the remaining water from the first liter, and add salt. Finish using the first liter of water, then add water from the second liter. Let it rest in the bowl, then steam it a second time. Place it back in the bowl, sprinkle with the remaining water, finish using all the water, and let it absorb well. Steam it a third time, then add butter and steamed raisins. Mix well, add a little sugar, and serve with the meat and vegetables on top.
