Korean Jjamppong (Spicy Seafood Noodle Soup)

Korean Jjamppong (짬뽕) is a spicy seafood noodle soup, not a stir-fried noodle dish. The word '碼' means 'ingredients,' and the dish features seafood stir-fried with Korean chili paste. Jjamppong actually originated as a Hunan snack and is a type of assorted noodle soup with a white broth. The soup base is made by simmering pork bone broth and adding vibrant red chili powder, giving it a spicy flavor. Pour the steaming hot broth over the noodles and enjoy this delicious meal—perfect for satisfying your hunger and a little indulgence, even when dining alone.

Steps
- 1
Prepare the ingredients. Peel and julienne the carrot; julienne the zucchini and onion. Clean the shrimp, squid, and baby bok choy. Blanch all ingredients except the onion and set aside. Cook the noodles, drain, and place them in a large bowl.
- 2
The three main seasonings for jjamppong are chili oil, Korean chili powder, and chili paste.
- 3
Wash and julienne the zucchini, set aside.
- 4
Clean the baby bok choy and set aside.
- 5
Clean the shrimp, trim the antennae, peel (leaving the head and tail on), and devein. (You can also leave the shells on for extra flavor.)
- 6
Arrange the blanched baby bok choy, carrot, and zucchini on top of the cooked noodles. (Feel free to add some bean sprouts if you like.)
- 7
Heat a pan and add the chili oil. Sauté the minced garlic until fragrant, then add the onion and stir-fry.
- 8
Add the shrimp and squid to the pan and stir-fry briefly.
- 9
Add the chili powder and chili paste, stir-fry, then pour in the pork bone broth and bring to a boil. Turn off the heat.
- 10
Pour the flavorful broth over the noodles, then arrange the shrimp and squid in the bowl. Enjoy your delicious jjamppong!
