Ingredients

2 servings
  1. 160 gramsthin rice noodles (about 5.5 ounces)
  2. 1 cupgarlic chives, cut into 2-inch pieces (about 100 grams)
  3. 1 cupbean sprouts (about 100 grams)
  4. 1/4 cupfirm tofu, diced (about 4 tablespoons)
  5. 1/4 cupchopped shallots (about 4 tablespoons)
  6. 1/4 cupchopped preserved radish (about 4 tablespoons)
  7. 2 tablespoonssmall dried shrimp
  8. Crushed roasted peanuts, for serving
  9. Chili powder, for serving
  10. Jumbo shrimp, as desired (peeled and deveined)
  11. 2large eggs
  12. Vegetable oil, for stir-frying
  13. Pad Thai sauce for 2 servings
  14. 1/4 cupbrown sugar (about 4 tablespoons)
  15. 1/4 cuptamarind paste (about 4 tablespoons)
  16. 2 tablespoonsfish sauce

Steps

  1. 1

    Simmer the Pad Thai sauce ingredients until slightly thickened.

    Heat oil in a wok. Stir-fry the shrimp and shrimp heads with a little Pad Thai sauce until just cooked, then remove and set aside.

    Stir-fry the tofu until golden. Add shallots, preserved radish, and dried shrimp. Push to the side of the wok. Add the noodles and a splash of water, stir until softened, then add the Pad Thai sauce and toss everything together. Push to the side, add a little more oil, crack in the eggs, scramble lightly, then fold the noodles over the eggs and let cook briefly.

    Stir-fry the garlic chives and bean sprouts with a little oil, then fold the noodles over the vegetables until cooked through. Transfer to a plate, top with the cooked shrimp, and serve with crushed peanuts and chili powder on the side. Garnish with extra garlic chives, bean sprouts, or your favorite vegetables.
