Mi Quang Frog Noodles

Rinse the frog pieces with salted water and drain. Lightly crush a few shallots and marinate the frog with salt, fish sauce, chili powder, and a little oil. Let it marinate for about 1 hour.

Prep the aromatics: Wash and crush the small garlic (or pearl onions). Peel and wash the fresh turmeric, place it in two nested plastic bags, and crush it with a pestle.

To make the broth: Place a pot on the stove and add peanut oil. When hot, sauté the crushed aromatics until fragrant. Scoop out a little to mix with the noodles later. Add the turmeric, a pinch of salt, and stir well. Add the marinated frog and stir until the frog firms up. Pour in just enough water to barely cover the frog. Simmer on low heat so the frog absorbs the flavors. After about 20 minutes, add more water as needed and bring to a boil (Mi Quang is typically served with just a little broth). Season to taste.

Prepare the herbs: After picking the mixed herbs, wash and drain them. Arrange on a plate and top with thinly sliced banana blossom.

To serve, place the noodles in a bowl, ladle the frog and broth over, sprinkle with roasted peanuts, squeeze lime on top, and serve with fresh herbs and crispy rice crackers.
