Ingredients

Serves 4 servings
  1. 1 3/4 lbsbeef (choose your preferred cut)
  2. 3 1/2 ozbacon (pork)
  3. 1 3/4 ozfresh chorizo (not the dried kind)
  4. 4chopped tomatoes
  5. Black pepper
  6. Salt
  7. Garlic
  8. 2large onions (chopped)
  9. 5jalapeño peppers (you can use bell pepper or any other chile)
  10. 2 bottlesdark beer (12 oz each)
  11. 1 cupwhite tequila (about 1/4 liter)
  12. 2.2 lbscorn tortillas (about 1 kg)

Cooking Instructions

    Cook the bacon in a skillet until it releases all its fat.

    Once the bacon is well fried, add the chorizo.

  3. 3

    When the chorizo is cooked, add the beef, both beers, and the tequila. The mixture will have a lot of liquid at this point; let it simmer until the liquid reduces and flavors the meat.

    When the liquid is almost gone, add the vegetables and spices (tomatoes, onions, jalapeños, garlic, salt, and pepper).

    Let it cook longer or shorter depending on whether you prefer your discada dry or a bit juicier.
