Ingredients

  1. 20fresh shrimp, deveined and trimmed
  2. 10 slicesginger
  3. Seasoning mixture
  4. 1large bowl Shaoxing wine (about 2 cups/480 ml)
  5. 2 slicesangelica root (dang gui)
  6. 1/2small handful ginseng root
  7. 10dried red dates
  8. 1small amount of goji berries
  9. 1 pinchsalt
  10. as neededWater,

Steps

  1. 1

    First, cook the shrimp until done. Separately, bring the seasoning mixture to a boil. Let both cool completely. Add the Shaoxing wine to the seasoning mixture only after it has cooled.

  2. 2

    Mix the cooled seasoning mixture with the Shaoxing wine in a container and set aside.

  3. 3

    Place the cooked, cooled shrimp into the cooled herbal wine mixture. Refrigerate and let soak for one day before serving. The longer it chills, the more flavorful it becomes.
