I grew up eating this a lot! It goes great with some rice and beans or shredding it and putting it in a taco or to make a Cuban sandwich .

Cooking Instructions

So first I take the pork and rinse it in water then i poke holes in the meat side. I squeeze the juice out of a lime and pour it all over it. I season it liberally and stuff some onion and garlic in the holes.I cut some of the skin off then marinate under it as well so the seasoning can really penetrate. I let mine marinate for 48 hours but you can marinate overnight.

Preheat your oven to 350 degrees. Take the pernil and put in oven for about 4 hours. Let it rest then enjoy !

I recommend serving this with pinto beans simmered in ham stock and rosemary on the stove while this roasts in the oven. I have made it this way since I was about 24yrs. Old. It took eating this pernil from a lot of friends and family n even restaurants to cook it differently. I had to tweek that plain, grey , dry n unjuicy taste to the cravings that even the first timers get n non believers.
