Steps
- 1
I'm going to keep this short and sweet because it's really all about just taking care of the dish whilst you're cooking and be creative. You don't have to follow anything on here to the letter just please use it as inspiration! Remember to season everything all the way through. Salt, pepper, sugar, butter, spices. Whatever you fancy.
- 2
Beetroot: peel the beet and slice half into thin slices. Put these onto a baking tray, season generously. Cut the other half into chunks and boil til soft. Put into a blender and blend with some mayo. Bam!
- 3
Place tomatoes and carrots whole and washed onto the baking tray with the beets, generously pour olive oil over, season, whack it all I the oven (200°c 10-15 mins ish?) Again pay attention to it and show it some love. Take it out when it's ready basically!
- 4
Sweet potato: peel it, chunk it and boil it. Strain and mash. Remember to season! You can use cream or butter to make it creamier, add some garlic if you want. It's your choice!
- 5
Fry the asparagus with some butter. Enough said.
- 6
Plate up however you like! Be creative and enjoy yourself!
