Ingredients

  1. 2 pcs Eggplant
  2. As per tasteSalt
  3. 1/2 tspturmeric powder
  4. 1/2 tspMustard
  5. As per tasteRed chillies
  6. As neededGrated coconut

Cooking Instructions

    Marinate eggplant in salt and turmeric mixture for about 15 minutes. Add besan, chilli powder and hing.

    Heat oil in a pan and add marinated eggplant slices one by one. Fry on both sides until it gets converted into crispy golden brown.

    Optionally season with mustard, red chillies and grated coconut.

  4. 4

    Finally eggplant fry is ready.
