Ingredients

  1. 1eggplant thinly sliced
  2. 1 tbspginger powder
  3. 1 tbspgarlic powder
  4. 1 tspcayenne powder
  5. 1 tsptumeric powder
  6. 1 tsponion powder
  7. 1bread crumbs
  8. 2eggs
  9. 1salt/pepper to taste

Cooking Instructions

    slice eggplant in thin circles

  2. 2

    salt, slices to taste

  3. 3

    combine spices with splash of water and mix making a paste

  4. 4

    cover slices with the paste

  5. 5

    whisk eggs

  6. 6

    dip slices in egg then bread crumbs

  7. 7

    fry with desired amount of oil. I find peanut works well here
