Chicken enchiladas with queso fresco, lettuce, and radish—my favorites.
Steps

Bring water to a boil and soak the chiles (stems and seeds removed) for a few minutes.

Blend the chiles with 1 clove of garlic.
- 3
Dip the tortillas in the sauce, then quickly fry both sides in hot oil.
- 4
Fill each tortilla with shredded chicken and roll up.
- 5
Top with lettuce, radishes, and sour cream.
