Cook rice with bit of salt and 1 tsp of oil. Cool this completely.

Heat oil in kadai add mustard, cumin, red chilli curry leaves. Once mustard splutter add chopped ginger and hing. Saute a bit.

Add channa dal, peanut, cashews. Once channa dal and cashews turns golden colour add grated coconut and coriander leaves. Saute couple of minutes.

Add this to rice and mix this thoroughly. Adjust salt level and serve hot.
