Clean the ribs of the blood and cartilage then let dry on a strainer.

In a bowl, put bay leaves, soysauce, worschestershire, ground pepper and 3 cloves of thinly sliced garlic then put the ribs to marinate for atleast 30minutes and make sure to flip the ribs atleast every 10-15 mins. You can also add a chilli to kick it up.

In a pan, bring oil into heat then add the garlic, until golden brown then put the rib to sear wait until it changes color.

Put the whole peppers, marinating sauce and add water, close the pan and bring to boil, once boiling, simmer until tender.

Then add the marinating sauce, whole peppers and wait to boil. Once boiling reduce heat to simmer until tender. Once tender add the vinegar let boil again(dont stir) then simmer.

Remove the bayleaves then now reducing while mixing well to balance the flavor. Reduce until the sauce is thick add salt and pepper to taste.

Serve while hot and enjoy! :) best paired with rice.
