Simple light meal suitable for #Whole30 diet.

Ingredients

2 servings
  1. 450 gskinless cod (or sea bass)
  2. 1/2 teaspoonsalt
  3. 1/4 teaspoonpepper
  4. 2 tablespoonscooking fat
  5. 1/4onion
  6. 2 teaspoonsgrated fresh ginger
  7. 2 clovesgarlic
  8. 180 gbutton, chestnut or potabello mushrooms
  9. 100 groasted red peppers
  10. Optional: sweet potato

Cooking Instructions

    Preheat oven to 180°C. Cut the fish into small pieces and season with salt and pepper. Bake for 12-15 minutes.

    While fish is cooking, put cooking oil into frying pan and roast red pepper.

    In another frying pan, cook chopped onion until it's translucent (2-3 minutes). Add the ginger and stir for 30 seconds. Add garlic and stir for another minute. Add the mushrooms and continue to cook, stirring for 1-2 minutes. Add roasted pepper, salt and pepper and stir for another 2 minutes.

    Place fish and vegetable on your plate and enjoy your meal :)

I have cooked this recipe again today and I swapped cod for a sea bass and I added cooked sweet potato and it was even more delicious.
