Ingredients

  • 2 call purpose flour
  • 3/4 csugar
  • 6 TBSbutter(partially melted)
  • 1/2 cthick coconut milk
  • 1/4 csour cream/plain yoghurt
  • 1 tspcoconut extract
  • 3egg whites
  • 1/2 tspsalt
  • 2 tspbaking powder
  • Pink food color

Steps

  1. 1

    Preheat oven to 170°c. Grease and flour baking dish

  2. 2

    In a bowl sift flour, baking powder and salt. Add sugar and mix well

  3. 3

    Separately mix butter, coconut milk, extract and yogurt. Whisk well to combine. Then whisk this into the dry ingredients

  4. 4

    Separately whisk egg whites to stiff peaks. Fold them in the batter just until combined. Add color to your desired shade. Bake for 30mins or until sides are pulling away and centre is springy
