Savoury Muffins

Savory Vegetables Cakes/muffins is what I call it & hence, made it in the morning. I planned to cook it as my breakfast but hell yeah, it turns out be weekend and weekends are meant for brunch. Isn't it?
To be honest, they automatically became brunch as they were quite filling and loaded with lots of veggies and cheese. This was my first attempt at baking a savoury muffin so I tried it with all purpose flour but I would surely come up with it's alternative healthy flour someday without compromising the taste.

This was my first attempt at baking a savoury muffin so I tried it with all purpose flour but I would surely come up with it's alternative healthy flour someday without compromising the taste.
Steps

Preheat the microwave at 180 °C.
In a bowl, beat an egg and add yoghurt & olive oil, mix well and keep aside. - 2
In another bowl, add veggies, flour, spice and herbs and mix well.

Now transfer wet ingredients to the dry ingredients and mix everything evenly with help of spatula.

Grease muffin tray and fill it with a spoonful of the mixture. You can brush the top of the muffin with olive oil which I skipped. This will make your muffin look little brown.

Bake for 20 mins and let it cool for a min. Demould the savoury cakes and serve.
