Jacket potato

A jacket potato,is a potato that has been baked for eating. When well cooked, a baked potato has a fluffy interior and a crisp skin. It may be served with fillings and condiments such as butter, cheese, sour cream, gravy or even ground meat. Potatoes can be baked in a conventional gas or electric oven, a convection oven, a microwave oven, on a barbecue grill, or on/in an open fire. Some restaurants use special ovens designed specifically to cook large numbers of potatoes, then keep them warm and ready for service. It is an English dish.

Heat oven to 220C/200C fan/gas 7. Rub 2 tsp olive oil and salt over 2 large baking potatoes and put on the top shelf of the oven

Bake for 20 mins, then turn down the oven to 190C/170C fan/gas 5 and bake for 45 mins-1 hr until the skin is crisp and the flesh soft.

Cut a cross on top of each potato, squeeze the sides. Put the butter inside the potato and mix well.

For toppings, take a bowl add the cottage cheese, bell pepper, onion, salt, pepper, parsley and drizzle a bit of olive oil and give a nice toss. Add the grated cheese.

Put the topping on the potato and add some more cheese.

Garnish with parsley and serve hot with salad.
