It's apple season, and with the best apples from the garden, we can make empanadas, jams, and compote.
Steps

Roll out one sheet of puff pastry and place it on a baking sheet. Poke holes in it with a fork to prevent it from puffing up too much.

Peel and slice the apples into thin rounds, then arrange them over the puff pastry.

Sprinkle with brown sugar and cinnamon.

Roll out the second sheet of puff pastry and place it on top as a lid. Seal the edges and poke holes in the top. Use any leftover pastry to cut out an apple shape and place it in the center.

Brush the top with the beaten egg and sprinkle again with brown sugar and cinnamon.

Preheat the oven to 400°F (200°C). Bake the empanada for 20 minutes, then lower the temperature to 350°F (180°C) and continue baking until golden brown.
