Kymi Almond Sweets

White, snowy, filled with ground almonds, sugar, rose water, and a story and a place that follows them... the word is one, but their name is famous... Almond Sweets. Their shapes vary from place to place. Due to their white color, which comes from the dusting of powdered sugar, these sweets are associated with joy. They are a treat traditionally offered at weddings, engagements, baptisms, and celebrations. The almond sweets from Kymi are renowned and famous. Flavored with rose water and made with a traditional recipe (this one is my grandmother's) that captivates with both their taste and shape. After baklava, they are the second sweet for which Kymi is known. They have always been offered to welcome new lives, new names, new beginnings...

Take the blanched almonds and roast them in a preheated oven for 15 minutes at 350°F (to lightly roast them).

Once cooled, grind them in a food processor. They should be ground very finely, like powder.

Place the ground almonds in a bowl and add the sugar, vanilla beans, and breadcrumbs.

Mix the ingredients. Take the eggs and separate the egg whites from the yolks. Whip the egg whites to meringue.

When the egg whites become meringue, fold them into the mixture we prepared earlier.

Mix, add the rose water, and knead.

The dough should become pliable. Shape the dough into small balls. Meanwhile, line a baking sheet with parchment paper and preheat the oven to 320°F to 350°F.

Once we shape all the dough into balls, we give them the shape typical of almond sweets from Kymi. We create little feet, as shown in the pictures.

When we finish shaping them, arrange them on the baking sheet and bake for 4 to 5 minutes, no longer, as they will harden. We want them to be soft.

Remove them from the oven after 4 to 5 minutes and spray them with rose water.

Sift the powdered sugar. Place each almond sweet into the powdered sugar one by one.

Dust each almond sweet with powdered sugar and let them cool completely.

Once the sweets are cool, wrap them in clear plastic wrap and serve them at our celebrations.
