Ingredients

30 minutes
3 servings
  1. 3 piecescooked, skinless, boneless chicken breasts (any chicken pieces can also be used if desired)
  2. 3dried ancho chiles, seeds removed
  3. 1/3 cupsesame seeds (about 50 grams)
  4. 3 tablespoonsshelled peanuts (about 25 grams)
  5. 1/3 cupshelled pumpkin seeds (about 50 grams)
  6. 3medium tomatoes
  7. 1/2onion
  8. 1 clovegarlic
  9. 1/4 cupoil
  10. 1 cupchicken broth

Steps

30 minutes

    Heat the oil in a pan.

  2. 2

    Lightly toast the ancho chiles and remove them from the oil.

  3. 3

    In the same oil, add the onion, garlic, sesame seeds, peanuts, and pumpkin seeds. Toast until everything is slightly browned, then add the tomatoes.

  4. 4

    Add the chiles to the mixture, pour in the chicken broth, and let it simmer a bit. Blend everything very well in a blender.

  5. 5

    If desired, strain the mixture, although it's not necessary if everything is well blended; this way, it remains thicker.

  6. 6

    Return the mixture to the pan and let it simmer for a while until it thickens slightly, stirring constantly with a wooden spatula.
