We use to enjoy tadka with rumali roti or plain roti but when we order it from hotel or from restaurant we at the same time order few unhealthy elements with it such as 1st bad quality of cooking oil and 2nd vanaspati ghee (DALDA) which is trans fat (you may google the harmful facts of trans fat).
So it's my endeavour to cook healthy and make my family healthy....#DAL

Steps

Soaked the tadka mix dals for at least 5 hours. Than drain the water and wash thoroughly to clean impurities.

Cook the dals in pressure cooker until it softens..

We need to cut the paneer in to shape of small cube and then fry until it turns light brown.

Then heat oil in pan and put 1/2tsp cumin seeds and 2pices of red chilli. Then we need to add 1tsp of chopped garlic, finely chopped 1cup onion one by one and add 1/2tsp sugar and fry until raw smell goes away.

At this stage we add 2tsp ginger &1tsp green chilli paste and fry until raw smell of ginger goes away and add 1cup chopped tomato.

Then we need to add 1 teaspoon of Turmeric powder, 1/2 teaspoon of Coriander Powder, 1/2 teaspoon of Cumin Powder. We need to fry the mixture until the oil starts separating.

Now we need to mix the cooked dals and add salt to taste and we may add water to adjust consistency and bring it to boil. It may seems I added some extra water this is because it will help to infuse the flavour of masala with the dals and paneer in the later stage.

Now we add roasted 1/2tsp Kasuri methi and keep it boiling.

Now we add fried paneer cubes.

Now we will keep it boiling to remove the excess water.

When you almost got your consistency add 1/2tsp pure cow ghee to get a good and authentic Punjabi flavour

Garnish and serve hot with rumali roti or plain roti #DAL
