Cooking Instructions

Heat oil in a deep frying pan with a lid

Fry onion together with green and red peppers, garlic and paprika until sautéed

Add diced tomatoes, using a wooden spoon nicely mix the ingredients

In half a cup of cold water dissolve two tablespoons of brown onion soup and add into the pan. Add a tablespoon spoon of sugar and stir.

Add salt and pepper to taste, simmer for 10 minutes stirring occasionally - then remove from heat.

In a separate pot placed the separated broccoli florets and add half a cup of water.

Bring to boil for two minutes, spoon it to the cooked soup without the water if there is any.

Add drained Koo peas in to the mixture and stir - then return the soup pot to the stove. Add ground black pepper and chopped cilantro.

Simmer for two minutes and serve with basmati rice

I had some chickpea cans I wanted to use and I decided to make this vegetarian strew which turned out delicious ! I used vegetables I had in my fridge and you can too! You can substitute the green peppers for red/orange/ yellow or add any vegetables you already have like celery or carrots. I used my left over vegetables . One egg plant was gone half bad, used my frozen tomatoes , and add a can of black beans. You can use any can of legumes ( chickpeas , white beans, but lentils would not be a good idea, )if you don’t want to use oven you can use same pot to cook if you are too lazy or have no time. . I wanted something light for lunch and had some mushroom. There was also this Shashouka recipe staring at me so, I fried the mushrooms, added some simple spices and threw it into the slow cooker for less than 2 hours. Give it a shot too! I did not have a can of crushed tomatoes; instead, I had leftover tomato paste and some fresh tomatoes so, I modified using both instead and I preferred it to be a little sweeter (sweet tooth be damned!) so, added some honey/syrup. Traditionally, it has eggs in it. We served with leftover roast chicken. Marsha M -

I made this a lot when I lived in France All it takes is to simmer some basic ingredients. It goes well with bread and wine You can also serve it with brown rice.You can also use panchetta or other cured meat instead of bacon (if it's quite salty, adjust the amount of salt.) I recommend using chopped block bacon instead of sliced... it gives a great texture! The lentils will become tender if stewed well. This stew is very healthy. Recipe by nene4 cookpad.japan
