Ingredients

30mins
  1. 2ripe plantains
  2. 2wraps of Ugba
  3. 1onion bulb
  4. Small handful Utazi leaves
  5. 3red bell pepper
  6. 1star maggi
  7. 1cooking spoon red oil
  8. Pinchsalt

Cooking Instructions

    Heat your over for 5 mins under 150°

    Peel off your plantains. Use knife to make an incision or design on the plantains

  3. 3

    Put the plantains in your oven and roast under 120° for 20 minutes

  4. 4

    While the plantains are in the oven, chop your onion, pepper and utazi leaves and keep aside. In a sauce pan heat up your red oil for one minute. Add your chopped onion and stir fry for one minute. Add the red pepper and stir for another one minute. Add the maggi cube, pinch of salt, and the ugba. Lastly add the chopped Utazi leaves and stir

    Take out the plantain from the oven. Place in a plate. Add the ugba sauce and serve hot
