Ingredients

  1. 500 gramscauliflower, cut into small florets
  2. 1green chilli, chopped
  3. 1small onion, thinly sliced
  4. 2garlic cloves, thinly sliced
  5. 2 cmginger, slivered
  6. 3 tbspveg oil
  7. 1 tspCumin seeds
  8. Halftsp mustard seeds
  9. 1bay leaf
  10. 1 tspTurmeric
  11. 1 tspgaram masala
  12. Pinchcayenne
  13. 2 tspcoriander powder
  14. Salt
  15. 1 handfulchopped coriander

Cooking Instructions

    Heat oil and add the mustard seeds, cumin seeds and the bay leaves.

    When seeds splutter, add the onions, ginger and garlic and saute till brown and oil separates. Add the turmeric, salt, garam masala, cayenne and the coriander powder, and stir fry again.

    Add the cauliflower and the green chillies and saute over high heat till the vegetables look glossy. Lower the heat and simmer, covered till cooked through.

    Serve hot, garnished with the coriander leaves.

I made such a rubbish job of making this! I needed more liquid, should I have added water or pre-cooked the cauliflower? If not, I needed more oil I guess. I make a similar base sauce and normally add a tomato, but it doesn’t look like this is in the recipe. I ate it and loved the taste of the bits that I didn’t burn to the bottom of the pan 🤣
