Ingredients

  1. For Aloo Bhaji:
  2. 4Potatoes (Boiled)
  3. 1/2 tspMustard Seeds
  4. Cumin Seeds (Pinch)
  5. Fennel Seeds (Pinch)
  6. Asafoetida (Pinch)
  7. 1 tspGinger Paste
  8. 3Green Chillies (Chopped)
  9. 1 SprigCurry Leaves
  10. 1/2 tspTurmeric Powder
  11. 1 tspSalt (or As required)
  12. 2 tbspOil
  13. 3-4 tbspsCoriander Leaves (Chopped)
  14. 1 cupWater (or As required)
  15. For Puri:
  16. 1 cupWheat Flour
  17. 1 tbspOil for Dough
  18. 1 cupOil for Frying
  19. 1/2 tspSalt
  20. 1/3 cupWater (or As required)

Cooking Instructions

    Wash and steam the potatoes. Peel off their skin. Cut the boiled potatoes into small pieces. Set aside.

    Heat oil in a cooking pan. I used an iron skillet. Once the oil is hot, add mustard seeds and allow it to crackle. Add cumin seeds and fennel seeds. Once the cumin seeds turn golden brown, add asafoetida. Add curry leaves and let them flutter for few seconds.

    Add ginger paste and chopped green chillies. Saute the ginger till the raw flavor leaves.

    Add the boiled potatoes. Give a stir and combine the potatoes with cumin and other spices. Add turmeric powder and salt.

    Add water. Mix well and cover the pan with lid. Let the curry get cooked for 4-5 minutes on medium flame.

    Remove the lid and crush few potatoes in gravy using spatula.

    Mix the bhaji well and garnish with coriander leaves.

    Aloo Bhaji is ready. Serve the bhaji hot with hot pooris.

    Sieve the whole wheat flour in a large mixing bowl. Add salt and oil in the wheat flour. Now while adding a little water at a time start kneading dough for the puris. The dough should be of medium consistency, not too soft not too hard. Knead the puri dough thoroughly and keep it aside to rest for atleast 10 minutes. Once the dough is well rested, divide the dough in small round lemon size balls.

    Take a round dough ball on rolling board and start rolling into small puris of 3-4 inch diameter. Repeat this step and roll puris from the remaining dough.

    Heat oil in a deep bottom kadai. I used and iron kadai. Do not heat the oil to smoking hot otherwise puris will get burnt. To check if the oil is ready for frying, add a small piece of dough and check if it floats on hot oil. Oil is ready for frying. Carefully place the rolled poori in the hot oil. While the puri is frying, tap using skimmer on top of the puri and let it puff. Fry the puri until it turns golden in colour. Flip the puri and cook till golden in colour on other side too.

    Delicious deep fried puri for puri bhaji is ready. Serve the puri hot alongwith aloo bhaji with gravy for breakfast.
