Cooking Instructions
- 1
Drain the chickpeas and reserve the liquid. Add the chickpeas to a blender with a crushed clove of garlic, a pinch of salt, 1 tbsp fresh lemon juice and the coriander. Add about 1:4 cup of the reserved chickpea liquid.
- 2
Blend on high and as the mix is blending slowly pour olive oil into the blender until you get a nice loose porridge consistency. Use a spatula to scrape down the sides of the blender. Once blended, taste the mix and add a tsp of fresh lemon zest, and salt and more lemon juice to taste. Serve topped with some freshly ground rock salt, coriander sprigs and a drizzle of lemon juice.

I really fancied hummus today, but I don't keep tahini as a standard cupboard staple. I remembered setting a recipe some where that used peanut butter instead, so this is what I came up with. justanothersoph -

Hummus Hummus
This recipe was modified from a restaurant trick to get ultra smooth hummus by processing the tahini first with sodium citrate and ice water. The sodium citrate helps retain the emulsion between the tahini oil and lemon juice. Instead of using soaked and cooked chickpeas, ive modified the recipe to use 1 large can of precooked chickpeas for convenience, but they require further cooking to soften. I add a healthy dose of lemon because i like the tartness and I think rosemary really compliments the earthy flavors of the chickpeas, but this could be left out or substituted for other herbs and flavors. Peanut Butter Hummus Peanut Butter Hummus
Hummus most often contains tahini, sesame seed paste, but it can be hard to find. I read somewhere about Nigella Lawson making hummus with peanut butter in place of the tahini, so I thought I'd try it. I didn't have lemon juice, so I used plain yogurt for the acid and I like it. Celeste -
