Ingredients

4 servings
  1. 1onion
  2. As neededoil
  3. 1garlic clove
  4. 5 gfresh ginger
  5. 1large orange sweet potato
  6. 2 lmushroom or vegetable stock
  7. 160 mlraw brown lentils
  8. 5 mlturmeric
  9. 1 candiced tomatoes
  10. To tastesalt
  11. To tastepepper
  12. Bunchbaby spinach

Cooking Instructions

    Chop onion into small cubes. Add to pot with oil and fry until translucent.

  2. 2

    Peel garlic clove and fresh ginger and chop finely. Add to onion and fry. You can add more oil if needed

  3. 3

    Chop sweet potato into cubes. And fry. Add a cup of stock. If the liquid evaporates keep adding cup for cup stock. Cook for 10 minutes.

    Add raw brown lentils and turmeric. Add more stock and continue adding stock until lentils are soft. When lentils are almost add the can of diced tomatoes. Season with salt and pepper

    Add your spinach to your serving dish and pour your hot stew over the spinach so that they wilt. Enjoy
