Cooking Instructions
- 1
Start warming up the milk in a sauce pan. When the milk starts to boil, reduce the temperature to the min.
Once the milk is hot and ready, on another pan, heat the butter and add the chicken. Stir for a few minutes.
- 2
Add the flour and stir well until the flour gets a bit of golden color.
- 3
Start adding the hot milk. Add little by little and stir well using a whisk. Good trick is to put away the pan from the heat while you mix. If the mixture is too thick, put the pan on the heat, add tinny bit of milk, move away from the heat and mix again. Repeat until you get a consistent mixture.
Ideally, the mixture must be thick but runny. Hopefully you can get a sense from the final picture on this step. If the mixture is too runny, you will have a hard time rolling the croquetas. - 4
Place the mixture in a plate as flat as possible. Leave it rest for 30 minutes. Cover it with clean film and put it in the fridge for at least 3 hours.
- 5
Place some flour, beaten eggs and bread crumbs in bowls.
- 6
With the help of a spoon, grab a bit of mixture and place it in your hand. Close your hand and roll it in your hand to create a cylinder shape.
- 7
Put the base on the flour and roll it with a fork. Then do the same in the egg and finally through the bread crumbs.
- 8
Place all of them in a plate so you can take a picture and show off on instagram 😂 #tapas
- 9
In a deep sauce pan, preheat vegetable oil. Enough so you can deep fry the croquetas.
The oil must be really hot so the croquetas are golden in less than a minute. This way, they won't soak up oil and they will be really crispy.
- 10
Rest them in kitchen paper for 15 minutes before serving.

Cream Croquettes That Won't Burst! Cream Croquettes That Won't Burst!
My husband's favorite dish is cream croquettes, but I never used to be too fond of them, so reluctantly experimented with them. Make sure the breadcrumbs are fine and evenly coated. Deep-fry in 355°F/180℃ oil. You could put anything inside! Adjust so that the ingredients will be about 230 to 250 g. Homemade Chicken Croquettes 🐓 Homemade Chicken Croquettes 🐓
Another one of Spain’s most famous tapas is CROQUETTES (croquetas). The most common ones are chicken croquettes, made from the leftover chicken used to prepare broth for stew.Since they are typically made with the less appealing parts of the chicken, like the entire carcass, adding more meat, such as the breasts, makes them even better. Once cooked, the breast meat can be repurposed for croquettes. Here, I don’t make stew because it’s very difficult to find a chicken carcass, so I make them using rotisserie chicken. When we buy one for a meal, we usually have the two breasts left over, so I use them to make croquettes.I have fond memories of making them with my grandmother! I would stand on a little stool because I couldn’t reach the kitchen counter, helping her coat them in breadcrumbs! Hers were truly the best! Every time we visited, I would always ask her to make them for me!#february2026 Chus Molinero -

Very Creamy Crab Croquettes Very Creamy Crab Croquettes
I wanted to use up some crab meat. When adding the flour and milk to the pan, keep on stirring constantly. This way, you can avoid the sauce from burning or forming lumps.I divided the filling into 8 portions, but they are easier to fry if you form them into small shapes, and are less liable to burst in oil. In addition, if you fry the croquettes after breading them while the filling is still cold, they're also more likely to burst in the oil. So let them warm up at room temperature after coating them. You only have to fry the croquettes very briefly. For 8 croquettes. Recipe by Minrin cookpad.japan -
A Taste of Home: My Mom's Croquettes A Taste of Home: My Mom's Croquettes
I've been eating these croquettes all the time but the ones I make always taste a little different from my mother's. I was going to ask her how to make it, but I haven't still asked. She made it for me recently and I realized that the difference comes from the amount of potatoes used. I think my croquettes are now similar to the ones my mom makes?Make sure to extract the water from the ingredients. Shape the potato mixture while it's still hot and let it cool down before coating and dredging it. Recipe by Donpintan cookpad.japan -
