Ingredients

4-5 servings
  1. 250-300 gmsYellow Pumpkin
  2. 500 ml(4-5 cups) Curd
  3. 1.5 tbspMustard Oil
  4. 3-4Garlic Cloves
  5. 3/4 tspMustard Seeds
  6. 1/4 tspAsafoetida Powder
  7. 1/4 tspSugar
  8. 2-3Green Chillies, slit from the middle
  9. 6-8Curry Leaves
  10. to tasteSalt
  11. 2 tbspFresh Coriander Leaves

Cooking Instructions

    Wash, peel, cube and steam the Pumpkin until soft. It should be cooked but not mushy. I steam it in the microwave for 10-12 mins.

    Allow the steamed pumpkin too cool.

    Whip the chilled curd. Add sugar and salt to taste.

  4. 4

    Heat the mustard oil in a tadka pan, add the mustard seeds, asafoetida, green chillies, garlic and curry leaves. Allow it to crackle until the garlic turns golden brown.

    Add the pumpkin to the curd, gently mix and pour the sizzling tadka on top.

  6. 6

    Garnish with chopped fresh coriander and serve with a regular Indian meal.
