Butcher's Croquettes
I used to love the butcher's style croquettes my mother made for me as a child. I recreated it from memory and turned it into a recipe. The potato filling is already cooked, so all you need to do is to deep fry the croquettes until the coating is crispy. Taste the filling at Step 6, and adjust the seasoning. For 12 croquettes. Recipe by Karin

2 Types of Croquettes
I like homemade croquettes, but it takes time and effort to make. Since you put so much effort, prepare 2 kinds.Enjoy this dish with your favorite condiments such as Japanese Worcestershire style sauce or ketchup. I also like the combination of Japanese Worcestershire style sauce and mayonnaise. You can freeze the panko coated patties for later use. When you deep-fry the frozen croquettes, the oil might spit so be careful! Recipe by Wanonano

CURRY BUNS (Japanese Deep-fried Curry Buns, Kare-Pan)

Showa-Style Homemade Fried Meat Skewers
This is one of the main dishes that we eat in our house. I used to use diced pork intended for stews but at some point I switched to soft-textured, light-flavoured pork fillets. Serve with tonkatsu sauce and mustard. If you over-boil potatoes, they'll just crumble when you try to skewer them so make sure to transfer them to a colander precisely 1-2 minutes after boiling. If you cook the potatoes raw, it will take too long for the heat to penetrate to the center of the potato when frying and you'll end up with burnt meat and onions. Recipe by Madam asahi

Our Family Recipe for Croquettes! Curry Flavored Version
This is one of the variation recipes from our croquette-loving family.- If you're microwaving the potatoes, leave some space between them and the plastic wrap. Keep the wrap on while you're letting it rest.- Shape the croquette while it's still warm, and coat once it has cooled down!- You can use the curry powder as listed exactly in the recipe if you're serving this to adults. Adjust the amount when serving to little kids though, since the aftertaste is a bit spicy. For 6 servings. Recipe by Donpintan

Our Family's Sweet Potato Croquettes
My mother used to make these quite often. At my parent's place, they preferred ground chicken, but our family prefers ground pork because my husband loves heavy meals.Try these out with ground chicken as well -- they'll turn out tasty and light. If you use katakuriko (corn starch), you'll be able to shape them without difficulty. Even children can help you because it's so easy to shape. The heart-shaped ones were made by my son. Your kids can make mini-sized croquettes that'll be perfect for bentos! If you make a lot and freeze before frying, they'll save you time the next time you want to make them. Recipe by Fujihime mama
