Roasted sweet potato wedges

Easy inexpensive side dish with lots of flavour

Ingredients

  1. 2sweet potatoes
  2. 1 tspgarlic puree
  3. 1 tspcider vinegar
  4. 1 tbspolive or avocado oil
  5. 2 tsppaprika
  6. 1/4 tspcayenne pepper
  7. 1 tsplime juice (or lemon)
  8. Season with salt and pepper

Cooking Instructions

    Wash and quarter sweet potatoes. In a large bowl mix spices, oil, garlic, lime juice, vinegar, salt and pepper.

    Toss potatoes in mixture to cover. Place onto a lightly oiled baking tray in the centre of a preheated oven 220C for 15 minutes. Turn oven and return to oven for another 15 minutes until golden on the outside and fluffy on the inside.
