Bharwa karela

Karela or Bitter Gourd . As the name suggests karela are bitter but are known to have therapeutic value, especially for those suffering from diabetes. It is an excellent sauce of vitamins B1, B2, and B3, C, magnesium, folate, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, and contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana. Bharwa karela is a unique side dish, the spiced masala with onions and spices are stuffed inside the bitter gourd cavity and then fried till it is crisp.

Cooking Instructions

Remove the skin of karela and slit it length wise from the center keeping the base intact. Remove all the seeds from inside and keep it separate for masala.

Now put salt in water and boil the karela for 5 minutes, after that dry it completely.

For bhawa masal dry Roast coriander seeds, fennel seeds, cumin seeds in a pan. Now grind all the masalas and garlic with 2 tablespoon water in a fine paste.

Add about 2 tablespoon oil in a kadhai add chopped onions, when onion turns light in colour add chopped green chilli and bharwa masala, saute it for 2 minutes, now add the karela seeds into it. After 2-3 minutes mixture became dry, switch off the flame and allow it to cool.

Clean off the karela completely, and stuff the prepared stuffing into it. Tie the karela with a piece of thread to prevent stuffing from coming out while frying.

Heat 2 tablespoon oil in a kadhai add in stuffed karela and roast for 5 minutes. Cover and simmer for 20 minutes stirring occasionally. Cook until the karela is cooked completely without burning.

Remove the threads. Serve the bharwa karela with soft phulkas. They also make a good side dish with dal and rice.
