Cooking Instructions

First prepare the dough for bhature, in a mixing bowl combine together maida, oil, curd, fruit salt and salt, mix well. By adding little water knead a smooth dough, cover and keep it for 3 - 4 hours for fermentation.

In a pressure cooker boil soaked kabuli chane along with amla, salt, haldi and water, it will take half an hour to cook.

For the gravy, heat oil in a pan and add the whole masalas, then add onions and cook on low heat until becomes light brown. Then add ginger green chillies, dry masalas and tomato puree, cook until all the moisture evaporates. Then add boiled chane and simmer for 10 minutes. It is ready to serve.

On the other side prepare aloo gobhi. Heat oil in a pan and add jeera and heeng, then add haldi, chopped aloo gobhi and salt, mix well and add ginger green chillies. Cover and cook on low heat, until becomes soft, then add red chilli, dhaniya, amchur powder and garam masala. Roast for 5 - 7 minutes on lie heat. It is ready to serve.

Heat ghee in a pan and add jeera, cloves and cinnamon, let them splutter, then add soaked rice. Roast on low heat, stirring continuously with light hands, until the ghee coats the rice properly. Then add salt and water, cover and cook, until all the moisture evaporates and the rice is properly cooked. It us ready to serve.

Now everything is ready, so we prepare the bhature. Heat oil for deep frying, first on high heat, then make the flame medium. Make balls from the dough, roll it and slide slowly in the hot oil. Fry it until becomes fluffy and light brown. In this way maje all the bhaturas.

For serving, take out chole in a bowl, aloo gobhi in another bowl, jeera rice in another bowl, bhature in a serving platter along with onion rings. Garnish with some chopped coriander leaves.
