Cooking Instructions

For chickpeas:- Soaked the chickpeas for 6 hours..and boil it in cooker..add 2 cloves and cinnamon stick..

Take a pan heay oil add cumin seeds,add chopped onion and ginger garlic paste,saute for until onion turns light pink..add tomato puree,add red kashmiri chilli poweder,Coriander powder,turmeric powder,garam masala,chole masala,dry mango powder,cumin powder,salt as per your taste..saute for 5 min..add chickpeas and saute it...after add water as you required..

For tikki:-boiled and peeled potatoes,add red chilli powder,cumin powder,garam masala,cornflour 1 tbsp,salt as per your tasteand mix well..take a medium portion of potato mixture and flatten into round patties..in a shallow frying pan or tawa, heat oil. Place the tikkis in the frying pan...keep on turning them after intervals and fry them till golden brown and crisp...

For green chutney:-1/2cup mint,1 cup Coriander,6 cloves of garlic,ginger,half onion,cumin seeds,lemon,green chilli,salt as per your taste..grind it properly..

For tamrind and dates chutney:-tamring 60 gram,4 dates you can use dry dates also,jaggery,fennel seeds,cumin seeds,garam masala,red kashmiri powder,ginger,water,salt as per your taste..mix and boil the mixture at least for 10 min..later allow the mixture cool completly..further strain the puree..add some water in puree..chutney must b not watery..

In a plate or bowl take 2 tikkis,add chole,green chutney,tamrind and dates chutney,add chopped onion or sliced onions,cumin powder,chat masala and nylon sev...garnish with Coriander leaves..
