Whenever I think of something bitter, karela comes in my mind but believe me if you cook stuffed karela with this recipe, you will find them more tastier and aromatic because of chickpea flour or besan. Ingredients

  1. 5-6karela or bitter gourd
  2. 1 teaspoonPanchforan
  3. 2Onions chopped
  4. 2-3green chillies chopped
  5. 1 teaspooncoriander powder
  6. 1 teaspoonturmeric powder
  7. 1 teaspoonred chilli powder
  8. 1-1 teaspoon eachginger garlic paste
  9. 2 teaspoonsamchur powder
  10. to tastesalt
  11. 2 tablespoonsbesan
  12. As required Oil

Cooking Instructions

    Wash, clean, wipe them dry and cut bitter gourd in desired shape. Make a cut on each karela vertically keeping the base intact. Remove the skin and seeds with your hands.

    I have used Panchforan in this recipe. Now we will grind the removed skin and seeds of karelas.

    Heat oil in a pan. Add panchforan. let them crackle. Now add onions and grinded seeds with skin in it and fry till golden colour. Now add turmeric powder, red chili powder, salt, amchur powder and garlic ginger paste. mIx little water and bhuno all spices.

    At last add besan and mix with all spices. When spices and besan are fragrant, it is done. Remove from pan and keep aside.

    Now stuff spices in all the karelas. Heat oil in another pan and add stuffed karelas in it

    Cover these and fry karela on a low flame till they get browned and cooked well. Check in between to change sides. Nice these are brown and crispy from every sides these are done.

    Now remove from pan and enjoy with Rice or chapati.
