Cooking Instructions

Cut all the potatoes in big chunks

Take a bowl add some curd, and add all the dry masala and mix well

Take a pan add 2 tbsp oil and let it heat up. Once heated at 1 tbsp cumin seeds and once it starts crackling add curry leaves bay leaf and whole red chilli with a pinch of hing.

Now add chopped onions and sauté until golden brown

Next add chilli ginger garlic paste and sauté for few mins

Now add the tomatoes and mix well

Next add the curd mixture and stir continuously for a few seconds

Add a little bit of water and let it boil for a min

Now add the boiled potatoes and add 2-3 potatoes mashed as well to make the gravy a bit thick. Cook for few seconds and add kitchen king masala and salt garnish with coriander leaves.

Your dhai vale aloo is ready enjoy with roti or paratha

And this is an out-of-the-box recipe and is inspired by an aunty ji, the cook who stayed with us for four days, during the time of marriage, and all the guests in the house went gaga over dahi bhallas made by her. She asked us to use 2 portions of moong dal to 1 portion of urad dal. This way, the bhallas would come out super soft and delicious, she says. This recipe makes use of electric beater to beat the batter until smooth, thick, airy and fluffy. It also makes use of an ice-cream scoop to make it super easy to drop batter into the hot oil and so as to have equal sized bhallas. Here, I have documented the steps required.
